After training at a hotel school, Simon perfected his skills in Michelin-starred restaurants, notably alongside chef Arnaud Donckele in Saint-Tropez and in the prestigious Paul Bocuse house in Collonges-au-Mont-d'Or, essential references of French gastronomy.
He then enriched his career with a culinary journey of nearly ten years around the world, exploring the cuisines and products of New Caledonia, Australia, New Zealand, the Caribbean, and Brazil. These international experiences nourished his vision of an open, creative cuisine inspired by the flavors of the world.
For his restaurant in Aix-en-Provence, Simon envisioned a modern bistronomic cuisine, showcasing local and fresh produce. At Tandem, he offers a reimagined Provence, where Mediterranean tradition and travel influences meet to provide an authentic and contemporary culinary experience in the heart of Aix-en-Provence.
